Banana Blender Muffins

I love when an entire recipe can be made in one bowl or one blender - because who seriously wants to spend ages cleaning numerous bowls and appliances.. not me! Which is why you just need a blender to make these muffins! So simple, quick to make, and minimal mess.

I love experimenting with new flavours for my snacks and treats, but one flavour I ALWAYS come back to without fail, is Banana! You just can't beat it! And I'm so happy with these ones; perfect flavour and the texture turned out so light and fluffy! Obsessed!!

Ingredients (makes 9)

  • 2 large ripe bananas, mashed

  • 2 vegan eggs (or regular eggs)

  • 1 tbsp honey

  • 1 tsp vanilla extract

  • 2 heaped tbsp almond butter (or nut butter of choice - PB would be amazing too!)

  • 1/4-1/3 cup almond milk (you may need more or less spending on the protein used - start with 1/4 cup and add more in if needed to achieve desired consistency)

  • 1 cup oat flour

  • 3/4 cup almond meal

  • 2 serves Happy Way VEGAN vanilla protein powder (DC: HAPPYELISE)

  • 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • Pinch of salt

  • 1/2 tsp cinnamon

  • 1/2 cup walnuts, crushed

  • Salted Banana Caramel @betterbeingsteph x @sneaky_wholefood blend, to top (or alternatively use sliced banana, or chopped nuts of choice)

Method

  1. Preheat your oven to 180C, fan-forced and line 9 muffin moulds.

  2. Add everything, except walnuts and toppings, to a food processor and blend until smooth. Add additional almond milk if needed.

  3. Stir through crushed walnuts.

  4. Spoon batter into 9 muffin moulds, add toppings and place in the oven to bake for 22 minutes, or until golden and a inserted skewer comes out clean.

  5. I love these warmed in the microwave for 10-15 seconds before eating to make them just like they are fresh out of the oven!
