Baked Weetbix Porridge

Say hello to your new winter breakfast obsession!

I've taken my most popular recipe of 2020, my Creamy Weetbix Protein Porridge, and turned it into BAKED WEETBIX PORRIDGE. I'm calling it - this may just be better than Baked Oats!

Why is Weetbix Porridge so great? Its incredible creamy, high protein, high fibre plus is a super balanced breakfast option and great way to start your day!

Ingredients

Serves 1

  • 2-3 GF Weetbix, slightly crushed

  • 1 serve vegan vanilla protein powder (or any flavour)

  • 1/2 tbsp chia seeds

  • 1/2 tbsp flaxmeal

  • 1/2 tsp baking powder

  • Pinch of salt

  • Boiling water

  • Dash of almond milk

  • 1 square dairy free dark chocolate (optional)

Method

  1. Combine all the dry ingredients in a bowl, then pour over boiling water - just enough to cover. Mix everything together, mashing the weetbix up as you go. You want tp achieve a THICK porridge consistency, so add more boiling water as needed. Once you have achieved the desired consistency, add a dash of almond milk (about 1-2 tbsp) and mix in to make more of a creamier consistency.

  2. Transfer this porridge mix into a greased ramekin and push in the dark choc piece so just covered (if using). Sprinkle over extra @spicetub Apple Crumble Mix and place in the airfryer* to bake at 180 for 10 minutes.

*You can also bake these in the oven - bake at 180C for 15-20 minutes.
