Teff Breakfast Pizza

I’m absolutely loving all things TEFF! If you are yet to hear of this amazing thing called Teff - it is the smallest seed in the world, it is naturally gluten free, and is packed with SO many health benefits. I’ve been loving experimenting with Teff Tribe products lately. Teff not only comes as Teff Seeds, but also Teff Flour and Teff Flakes - which as basically a completely gluten free and celiac friendly version of oats. They can be used to make a super creamy porridge, or today, I used the Teff Flakes to make a breakfast PIZZA! Yes, you can indeed have pizza for breakfast!

Ingredients (serves 1)

  • 1/3 cup Teff flakes

  • 1 tbsp Teff flour 

  • 1/2 mashed banana

  • 1 tbsp coconut yoghurt

  • 1 serve Happy Way vanilla vegan protein (discount code: HAPPYELISE)

  • 1 tsp vanilla extract

  • 1/2 tsp ground cinnamon 

  • 1/2 tbsp pure maple syrup 

  • Dash of almond milk 

  • Toppings: coconut yoghurt, fresh berries

Method

  1. Preheat your airfryer (or oven) to 180 degrees celsius.

  2. Combine all the ingredients in a small bowl and slowly add almond milk until you achieve a dough like consistency that can be handled and moulded into a base.

  3. Transfer mixture onto a square of baking paper and shape into a thin pizza base then place in the airfryer to bake for 12-15 minutes (or until golden).

  4. Top with your toppings of choice and enjoy!
