Plant-Based Baked Gnocchi

I would say I'm 95% plant-based now and absolutely loving this way of eating. I've been on the look out for a good plant-based meat alternative to incorporate into my diet to help add some extra protein and variety to my meals.

I've been trialling Flexible Foods plant-based mince range over the last few weeks, and I am so impressed! These plant-based minces tick all the boxes - delicious, easy to use in any recipe, nutritious, high protein, and free from gluten, soy, dairy, artificial ingredients and preservatives! Plus they also contain up to 4.9mg of iron per serve!

They are made from Texturised Pea Protein (the flavoured 'minced' have some natural herbs and spices added) - no beans or legumes - so they finally give people like me, with super sensitive tummies, a plant-based meat alternative that we can eat without ending up with an upset tummy.

I love the simplicity of preparing these 'minces' - all you do is add water, thats it! So they are a real convenient and easy way to add some protein and deliciousness to any meal.

Plant-Based Baked Gnocchi

Serves 4

Ingredients

  • 500g gluten free gnocchi

  • 1 packet Flexible Foods Taste of Italy

  • 1 cup canned crushed tomatoes

  • 2 handfuls baby spinach leaves

  • To serve: nutritional yeast flakes

HOW TO

  1. Preheat the oven to 180 degrees celsius, fan-forced.

  2. Cook your gnocchi as per the packet instructions.

  3. Pour the Flexible Foods packet into a non-stick pan with 400ml of water and simmer over low heat for 4 minutes. The add in the canned tomatoes and spinach. And continue to simmer until spinach has wilted.

  4. Add in the cooked gnocchi to the pan with the sauce mixture and stir through.

  5. Divide gnocchi amongst 4 ramekins and place in the oven to bake for 15 minutes.

  6. Garnish with some nutritional yeast and serve!
