Peanut Butter Choc Chip Muffin

Who’s ready for a big, super fluffy, decadent muffin that is made from all wholesome ingredients and is all for you, and only you? Yep, that’s right - another incredible single serve recipe coming at you that involves arguably the best flavour combo of all time - peanut butter and chocolate!!

Ingredients

Serves 1

  • 30g vegan vanilla protein

  • 2 tbsp almond meal

  • 1 tsp baking powder

  • Pinch of salt

  • 1 heaped tbsp peanut butter

  • 1/2 ripe banana, mashed

  • 1/2 tbsp pure maple syrup

  • 3-4 tbsp almond milk

  • Dairy free dark chocolate chips, measure with your heart

Method

  1. Preheat your airfryer (or oven) to 180 degrees.

  2. In a small bowl, combine all the dry ingredients. Then mix in the remaining wet ingredients.

  3. Stir through the chocolate chips.

  4. Spoon batter into a single muffin mould.

  5. AIRFRYER METHOD: place in the airfryer to bake for 15-17 minutes, or until golden and cooked through.

  6. OVEN METHOD: place in the oven to bake for 20-24 minutes, or until golden and cooked through.
