Mini Coconut Cinnamon Loafs

Ingredients

  • 1 cups gluten free plain flour

  • 3 gluten free @weetbixau

  • 1 tsp baking powder

  • Pinch of salt

  • 1 cup desiccated coconut

  • 1.5 tsp ground cinnamon

  • 1 tsp vanilla extract

  • 1 cup @ulu_hye Nut Mylk (or mylk of choice)

  • 3 heaped tbsp @purecocobella coconut yoghurt

  • 1/4 cup honey or maple syrup

  • 1 tbsp @lakantoaustralia monk fruit sweetener (or an extra tbsp of any sweetener)

  • 2 vegan eggs (or normal eggs)

Method

  1. Preheat the oven to 180 degrees celsius, fan-forced and line/grease mini loaf moulds.

  2. Place all dry ingredients into a bowl and combine. In a separate bowl combine all the wet ingredients.

  3. Pour wet mixture into the dry mixture and combine.

  4. Spoon into lined moulds, top with coconut flakes (optional) and bake for 30 minutes, or until cooked through and golden.
