Macadamia Lemon Protein Balls
Lemon is such an underrated flavour! It is so fresh and sweet and makes the PERFECT addition to these protein balls! I honestly cannot get enough of these. And if you're not a lemon fan, I think this recipe might just convert you!
Ingredients
3 tbsp Happy Way Vegan vanilla protein (discount code: HAPPYELISE)
Juice of half a lemon
Zest of 1 lemon
1 cup macadamias
3/4 cup shredded coconut
1 tsp vanilla extract
1/4 cup rice malt syrup (or maple syrup)
Desiccated coconut, for rolling
Method
Add all ingredients into a food processor and blend until combined. The mixture will be a little sticky but able to be handled!
Using slightly damp hands, roll into 10 balls and coat in desiccated coconut.
Place in the fridge to set for 2 hours.
