Macadamia Lemon Protein Balls

Lemon is such an underrated flavour! It is so fresh and sweet and makes the PERFECT addition to these protein balls! I honestly cannot get enough of these. And if you're not a lemon fan, I think this recipe might just convert you! 

Ingredients

  • 3 tbsp Happy Way Vegan vanilla protein (discount code: HAPPYELISE)

  • Juice of half a lemon

  • Zest of 1 lemon

  • 1 cup macadamias

  • 3/4 cup shredded coconut

  • 1 tsp vanilla extract

  • 1/4 cup rice malt syrup (or maple syrup)

  • Desiccated coconut, for rolling

Method

  1. Add all ingredients into a food processor and blend until combined. The mixture will be a little sticky but able to be handled!

  2. Using slightly damp hands, roll into 10 balls and coat in desiccated coconut.

  3. Place in the fridge to set for 2 hours.
