Lamington Protein Balls

For the balls:

  • 100g almond meal


  • 3/4 cup shredded coconut


  • 20 pitted dates (soaked in boiling water for 20 minutes)


  • 1 serve Happy Way vegan vanilla protein powder

  • 2 tsp vanilla essence


  • 3 tbsp melted coconut oil

For the choc coating:

  • 3 tbsp cacao powder


  • 3 tbsp melted coconut oil


  • 1 tbsp pure maple syrup

  • Extra desiccated coconut for rolling

Method

  1. Drain the dates and place in a food processor or blender (I use a Vitamix). Blend until smooth and a paste has formed.

  2. Add all ingredients into a bowl and combine. Use your hands to ensure everything is mixed well.

  3. Roll into 15 balls and freeze for 30 minutes. In the meantime, move onto the chocolate coating.

  4. Combine all coating ingredients, except coconut, in a small bowl.

  5. Once set, dip the balls in the chocolate coating one by one - to minimise mess I like to use a spoon and fork to coat the balls and lift them out of the chocolate.

  6. Spread a think layer of coconut onto a plate and roll the chocolate coated bliss balls in the coconut until evenly covered.

  7. Place back in the freezer for 30 minutes to set.
