Honey Nut Granola
Honey is always my sweetener of choice when it comes to baking and I especially love it in this granola recipe!
It is the perfect recipe to start your day with, served up with mylk or coconut yoghurt and some fresh banana for a perfectly balanced and wholesome meal! And I can bet, once you try this recipe, you will be making it on repeat! It doesn't last long in my household - I too often find myself eating it straight from the jar!
Honey Nut Granola
Ingredients
1/3 cup Mānuka Honey (or normal honey)
1/4 cup coconut oil, melted
2 cups mixed nuts, chopped (I used cashews, macadamias, walnuts)
1 cup mixed seeds (I used pepitas, sunflower seeds and linseeds)
1/2 cup coconut flakes
1/2 tsp ground cinnamon
Method
Preheat the oven to 160C, fan-forced.
Add the honey* and coconut oil to a bowl and combine.
Then add in the remaining ingredients and mix well to evenly coat everything.
Line a baking tray with baking paper and pour the mixture onto the tray and spread out evenly.
Place in the oven to bake for 20 minutes.
Then take the tray out, gently stir and move the mixture around and pop back in the oven for another 5 minutes. Repeat this one more time and then remove from the oven. Allow to cool completely before moving the granola - this will help to make it super chunky!
Then break the granola into your desired size pieces and place in an airtight container or jar for up to 1 week.
*If the honey is no runny enough, you may need to microwave it for 20-30 seconds so it is easier to stir.
