Healthy ‘KFC Style’ Chicken

Guys, lets stop over complicating healthy eating. It's easy to get consumed by all the latest trends & fancy health foods on the supermarket selves, but none of that is necessary to live a healthy, happy & balanced life!

Healthy eating doesn't have to be hard, expensive or time consuming. Sometimes it's important to remind ourselves of this and just strip our nutrition right back to basics and simply focus on WHOLEfoods. This week I've been absolutely loving making a wrap for lunch each day, as opposed to my usual meal prepped meals! And YES, wraps and bread CAN absolutely be a part of a healthy balanced diet!

Wrap + protein source + salad + a healthy fat = a delicious, easy and perfectly balanced meal that is going to nourish your body!

I have been loving: GF Wrap, mustard, 'KFC' Style Chicken, roast pumpkin, lettuce, tomato, & carrot. All wrapped up and toasted for extra deliciousness!

I made this 'KFC' Style Chicken in my airfryer (oven option included) and let me tell you; you need this recipe in your life. It reminds me of the KFC Chicken Twister wraps I use to get back in the day! Incredible.

Healthy ‘KFC Style’ Chicken

Ingredients

1 large chicken breast, cut into strips

1 cup almond meal

2 tsp Italian herbs

1 tsp paprika

Salt and pepper, to taste

1/2 cup mylk + 2 tbsp vegan egg replacer/flaxmeal (or just 1 normal egg on its own)

Olive oil spray

  1. Combine the almond meal, herbs, paprika, salt and pepper in a bowl. In a separate bowl, the mylk with vegan egg replacer (or whisk a normal egg).

  2. One at a time, coat the chicken strips in the liquid then the crumb mixture. Place on a piece of baking paper and use the back of a spoon to press crumb mixture down firmly so it sticks.

  3. Spray chicken strips with olive oil and place in the airfryer* (keep on the baking paper).

  4. Cook at 180 degrees for 12 minutes. Then flip and spray again with oil, and cook for another 8-10 minutes or until super golden & crispy!

*if using an oven, bake at 180 degrees, fan-forced. Cooking time will vary and may be a little longer.
