Gut Lovin’ Curried Eggs

Its no secret I've had, and still do have, my fair share of gut issues - in particularly IBS and leaky gut. So in the back of my mind when putting a meal or recipe together, I'm always thinking of way to add in as much nutrients and good-for-your-gut ingredients.

I discovered Gevity RX bone broth years ago back when I first started suffering from my gut issues and would have it every morning on an empty stomach in hot water. And it was honestly one of the key additions to my diet that truely helped me manage my conditions (obviously amongst many other lifestyle and diet changes). This is because it is rich in gelatin, which is essential for connective tissue function – so it literally acts to heal and seal the gut!

GUT LOVIN' CURRIED EGGS ON TOAST

Ingredients (serves 1)

  • 2 eggs

  • 1 tsp Gevity Curry Bone Broth

  • 1/4 tsp garam masala

  • 1/4 cup green peas

  • Handful of baby spinach, roughly chopped

  • 1/2 avocado, mashed

  • 1 slice of bread of choice, toasted

Method

  1. Heat a non stick pan just low-medium heat and spray with coconut or olive oil.

  2. Crack in your eggs, and scramble. Continue stirring and add in the bone broth, garam Masala, peas and spinach.

  3. Continuing stirring and cooking until eggs are cooked to your liking.

  4. Season with salt and pepper and serve on your bread of choice with smashed avocado and some fresh parsley (optional).
