Coconut Fig Overnight Oats

I absolutely adore figs! I look forward to the few months of the year I can get fresh, ripe figs from my local farmers markets! This weekend I was so excited to discover the fig store back at the markets, so of course I had to incorporate them into my breakfasts for the week. Coconut and figs are such a good combination and work so perfectly in this deliciously sweet overnight oats!

Try let your figs ripen for this recipe, the riper they are the sweeter they get! They should be pretty soft when ripe (but not too soft that they are hard to cut or go mushy).

Ingredients (serves 1)

  • ⅓ cup oats

  • 1 tbsp chia seeds

  • ½ tsp ground cinnamon

  • ½ small banana, mashed

  • ⅓ cup coconut milk

  • ⅓ cup water

  • 1 tsp maple syrup

  • ½ tsp vanilla extract or 6 drops vanilla stevia

  • 1 fig and walnuts for topping

Method

  1. Combine all the ingredients, except the fig and walnuts, in a bowl or jar.

  2. Place in the fridge overnight.

  3. In the morning, top with sliced fig and crushed walnuts!

Storage: This recipe will last in the fridge for up to 5 days, making it perfect for meal prep or for those busy mornings you need a quick grab-n-go brekkie!
