White Chocolate Macadamia Blondies
Actually beyond proud of this recipe! The fact I had to make 2 batches within 2 days just to photograph them because they got snapped up so fast, speaks to how bloody good they are!!
Super fudgy on the inside, & deliciously crispy on top. Just like a blondie should be in my opinion.
Its hard to believe these are made of 100% wholefood ingredients!! Plus, GF, DF & Vegan!
White Chocolate Macadamia Blondies
Ingredients
Makes 12
2 cups almond meal
Pinch of salt
1/2 tsp baking powder
1/4 tsp baking soda
2 heaped tbsp natural peanut butter
2 tbsp coconut oil, melted
1/2 cup coconut sugar
1 tsp vanilla extract
1/4 cup almond milk
1/3 cup macadamias
6 squares dairy free white chocolate, chopped
Method
Preheat your oven to 180 degrees, fan-forced.
Place all the dry ingredients into a bowl & mix to combine. Then add in the remaining wet ingredients & mix until combined. The mixture will be quite thick, like a cookie dough consistency.
Stir through the macadamias & white chocolate chunks.
Transfer into a lined square baking pan & place in the oven to bake for 12-15 minutes, until golden brown on top.
Allow to cool for 15 minutes in the pan before transferring to a wire cooling rack. Its best to cool as much as possible before slicing.
ENJOY!!
Store in the fridge & reheat for 20 seconds in the microwave before eating, and they taste like they are fresh out the oven!
