Sweet Potato Protein Muffins

Ingredients

  • 1.25 cup oat flour

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • Pinch of salt

  • 1 serve Happy Way VEGAN vanilla protein (I highly recommend this protein because it tastes like cake batter, use HAPPYELISE for a discount!)

  • 2 flax eggs (or regular eggs)

  • 1 small ripe banana, mashed

  • 1 tbsp monk fruit sweetener (or maple syrup)

  • 2 tbsp cashew butter (or almond)

  • 1 cup mashed sweet potato

  • 1 tsp vanilla extract

  • 1/2 tsp ground cinnamon

  • 1/2 -2/3 cup almond milk

  • 1/3 cup pecans, roughly chopped

Method

  1. Preheat oven to 180 degrees celsius, fan-forced.

  2. Add all ingredients to a food processor, except pecans, and process until a smooth batter forms.

  3. Mix in the pecans and spoon mixture into 9 muffin moulds.

  4. Bake for 20-25 minutes or until cooked through.
