Sugar-free Double Choc Macadamia Cookies

Soft, gooey, chunky and filled with chocolate - what more could you want in a cookie?

I couldn't wait to experiment with the NEW Natvia sugar-free Brown Sugar Alternative and let me tell you, it did not disappoint! Brown sugar just brings such a nice sweetness and caramel-y taste to baked sweets and it worked PERFECT in this recipe.

I'm all for consuming sugar in moderation as part of a healthy balanced diet. Especially when it comes from wholefoods like fruits, maple syrup, honey etc. There is nothing wrong with that whatsoever. But sometimes I do like to create lower sugar treats and snacks - its actually something that is requested a lot when I ask what you guys want to see more of!

I'm very picky about which sugar-free sweeteners I use. Some can be super harsh on your gut, so you need to be careful about which ones you choose. Sugar-free Double Choc Macadamia Cookies

Ingredients (makes 10-12)

  • 1/3 cup vegan butter or alternative, cold (I used Nuttelex)

  • 1 tsp vanilla extract

  • 1/2 cup Natvia 100% natural brown sugar alternative (or you could sub coconut sugar)

  • 1 egg

  • 1 cup gluten free plain flour

  • 1/4 cup cacao powder

  • 1 tsp baking powder

  • 1 tbsp almond milk

  • 3 squares dark choc, chopped

  • 1/4 cup macadamias, chopped

Method

  1. Preheat the oven to 180C, fan-forced.

  2. Using electric beaters, beat together cold butter, vanilla, brown sugar & egg until pale and creamy.

  3. Then sift in the flour, cacao, and baking powder. Mix in with a spoon. As you are mixing add the almond milk to help form dough.

  4. Fold through dark choc and macadamias.

  5. Spoon out mixture & roll into balls, place on a lined baking tray & press down with the back of a fork. These cookies won't expand so make into the shape & thickness you desire.

  6. Place in the oven to bake for 10 mins.
