Salted Maple Crunch Bliss Balls 

Lately, I've had a few requests for date-free and low FODMAP bliss balls. And trust me, I know what it's like to have super specific and restrictive dietary requirements, so I wanted to help my lovely friends out there who share these dietaries and make a super delicious snack recipe just for you so you never feel deprived or like you are missing out.

But I promise, it does not compromise on taste!! I love the added crunch in these from the rice puffs, I feel like it adds a but more fun and excitement to a classic bliss ball.

Ingredients (makes 12)

  • 1 cup almonds

  • 1 serve Happy Way Vegan vanilla protein powder (my discount code is 'HAPPYELISE')

  • 1/2 cup almond butter

  • 1/4 cup pure maple syrup

  • 1 tsp vanilla extract

  • 2 tbsp coconut oil, melted

  • Pinch of salt

  • 1/2 cup puffed rice (I use Freedom Foods)

Method

  1. Place all the ingredients, except the puffed rice, in a food processor and blend until a dough forms.

  2. Pour in rice puffs and pulse a few times until combined into the mixture.

  3. Roll mixture into 12 balls, pressing firmly together as you roll.

  4. Then place the balls in the fridge to set for 1 hour.
