Raisin and Cinnamon Slice

Ingredients

  • 1.25 cup Almond meal

  • 1/2 cup hemp flour

  • 2 tbsp coconut flour

  • Pinch of salt

  • 1 tsp baking powder

  • 2 tsp cinnamon

  • 3 flax eggs (or regular eggs)

  • 1/4 cup coconut oil, melted

  • 1/4 cup honey

  • 1 tsp pure vanilla extract

  • 1/4 cup almond milk

  • 2/3 cup raisins

  • Honey cinnamon drizzle: 2 tsp ground cinnamon + 2 tbsp honey

Method

  1. Preheat the oven to 180 degrees celsius, fan forced and line a baking pan.

  2. Combine all your wet ingredients in one bowl and all the dry in another. The tip the wet ingredients into the dry and mix well. Fold in the raisins and stir.

  3. Transfer mix into lined baking pan and drizzle over the Honey-Cinnamon mixture.

  4. Pop in the oven to bake for 40-45 minutes.

  5. Optional: after cooled, add a drizzle of dark chocolate over the slice for extra deliciousness! .
