Mocha Peanut Butter Energy Bites

Chocolate, coffee and peanut butter are my 3 favourite things; so I thought why not combine them to make one epic energy ball recipe. These are going to be the PERFECT snack when I go back to work this week providing a much needed energy kick morning or afternoon.

Ingredients

  • 1 cup oats

  • 1 tbsp cacao powder

  • 1 serve Happy Way vegan chocolate protein

  • 3 tsp instant coffee

  • 2 tbsp peanut butter

  • 2 tbsp pure maple syrup

  • 1/2 cup dates, soaked and discard water

Method

  1. Blend all ingredients in a food processor until combined a dough forms. Roll into 10 balls and refrigerate for 1 hour before eating!
