Mocha Breakfast Pudding
Ingredients (serves 1)
2 GF weetbix, crushed
1 tsp instant coffee
1/2 serve Happy Way vegan chocolate protein powder (discount code: HAPPYELISE)
1 tsp cacao powder
Sweetener of choice - I used chocolate stevia drops
1/2 mashed ripe banana
1/3 cup almond milk
1 tsp baking powder
Pinch of salt
For topping: coconut yoghurt mixed with 1 tsp coconut sugar and 1 tsp cacao
Method
Combine all ingredients (except the topping ingredients, in a bowl and mix well.
Pour into a lined single serve baking pan or muffin mould and bake for 15 minutes on 180 degrees in the airfryer (for oven, bake at 180 degrees fan-forced for 15-20 minutes).
