Levain Style Choc Chip Walnut Cookies
The cookies of your dreams are here! Super chunky and soft on the inside and absolutely LOADED with the goodness of chocolate chips and crunchy walnuts.

Levain Style Choc Chip Walnut Cookies
Makes 6 large, or 12 smaller cookies
Ingredients
2 eggs
1 tsp vanilla extract
2 tbsp coconut oil, softened
2 tbsp runny nut butter (I used almond)
1/2 cup granulated sweetener (I used Stevia granules to make them sugar free)
2 cups almond meal
1/4 cup tapioca flour
1 tbsp coconut flour
1/2 tsp baking powder
Pinch of salt
Choc chips and chopped walnuts, measure with your soul
Method
In a medium bowl, cream together the eggs, coconut oil, nut butter and vanilla extract using electric mixers. Mix until smooth.
Add in the sweetener and mix again until it is well incorporated.
In a separate bowl, combine the almond meal, tapioca flour, coconut flour, baking powder, and salt together. Combine the wet and dry ingredients.
Fold in chocolate chips and walnuts.
Refrigerate dough for 30 mins.
Preheat oven to 180C, fan-forced.
Form dough into 6 large or 12 smaller cookies, place the dough on your lined baking sheet, and press them down just slightly (do NOT flatten too much. You want them to be chunkyyy).
Bake for 20-22 minutes or until the edges of the cookies are golden brown.
Let cool slightly before enjoying!
Highly recommend reheating for 10-20 seconds in the microwave before eating to make them taste just like they are fresh out the oven.
