Lemon Weetbix Breakfast Yoghurt Cake
Over the weekend I asked you guys for any recipes you'd like to see and there was an overwhelming theme of both 'anything involving Weetbix' and 'something lemon flavoured'. I feel like you guys really get me because these are probably my two greatest obsessions right now!! So I've combined them both into this delicious and simple Breakfast Cake!
Ingredients (Serves 1)
2 gluten free Weetbix, crushed
1 scoop Happy Way vegan vanilla protein (my discount code is ‘HAPPYELISE’)
1/2 tbsp ground flaxseeds
1/2 tsp baking powder
1 heaped tbsp coconut yoghurt
Juice of 1/2 a medium sized lemon
1 tsp vanilla extract
1/2 tbsp pure maple syrup
2-3 tbsp almond milk
Method
Combine all dry ingredients in a bowl and then add in the wet. Mix well to combine.
Transfer mixture into a greased ramekin and place in the airfryer to bake for 12-13 minutes at 180 degrees celsius.
I topped mine with sugar free icing sugar, but you could also use more coconut yoghurt!
OVEN OPTION: bake in an oven at 180 degrees celsius for 20-25 minutes.
I'm yet to try this in the microwave, but I think it would work! Cook for 30 second increments for 2 minutes or until cooked through!
