Healthy Snickers Fudge

Say hello to your newest favourite treat: Healthy Snickers Fudge!

This recipe tastes so naughty, you’ll find it hard to believe that it is refined sugar-free and made of 100% wholefood ingredients! Plus, as an added bonus, this fudge is gluten and dairy free!

Ingredients:

  • ½ cup pitted dates, soaked in hot boiling water for 15 minutes then discard water

  • ½ cup natural peanut butter

  • ¼ cup coconut oil, melted

  • 1 tsp vanilla extract

  • 1 heaped tbsp honey

  • 2 tbsp cacao powder

  • Pinch of salt

  • ¼ cup warm water

  • For topping: chopped peanuts, melted dark chocolate and extra peanut butter

Method

  1. Add all ingredients, except for the water, to a food processor or blender and blend.

  2. As it is blending, slowly add in the warm water until the mixture is smooth and combined.

  3. Transfer mixture into a silicone or lined baking tray and spread out evenly, about 1cm thick.

  4. Place in the freezer for minimum 3 hours to set (overnight is best).

  5. Once set, remove from the freezer, slice and drizzle over melted chocolate, peanut butter and a sprinkle of chopped peanuts.
