Golden Weetbix Bars

Weetbix and oats in the one snack? Sign me up! They are also another fabulous one bowl recipe, perfect to whip up mid week for a delicious morning or afternoon snack.

Ingredients

Serves 10

  • 5 GF Weetbix

  • 1 cup rolled oats

  • 1 cup shredded coconut

  • 1 tsp baking powder

  • 4 heaped tbsp vegan butter or coconut oil

  • 2 tbsp golden syrup

  • 3-4 tbsp pure maple syrup

  • 1 egg/chia egg for vegan version

  • 1 heaped tbsp almond butter

  • Dash of almond milk

Method

  1. Preheat the oven to 180C fan-forced.

  2. Add all the ingredients to a food processor and blend. Add almond milk as needed until when pressed together, the mixture holds.

  3. Transfer mix into a lined baking pan and press down firmly and evenly.

  4. Bake for 18-22 minutes, or until golden brown.

  5. Allow to cool completely in the fridge before slicing into bars.
