Fruit and Nut Choc Protein Bars

If you are obsessed with the fruit & nut combo (or even if you're not), you are going to love this recipe!

I've turned this incredible flavour combo into the most delicious protein bar that tastes just like a bar of fruit and nut chocolate! So indulgent and decadent yet the perfect afternoon snack option when those sweet cravings set in because they contain a good hit of protein + are low in sugar so won’t spike your blood sugar.

Fruit and Nut Choc Protein Bars

Makes 12 bars

Ingredients

  • 1/2 cup natural almond butter

  • 1/4 cup coconut oil

  • 1/3 cup rice malt (or pure maple syrup)

  • 1 tsp vanilla extract

  • 1/2 cup vegan chocolate protein powder

  • 1/4 cup cacao powder

  • 2 tbsp chia seeds

  • 2 tbsp buckinis

  • 1/3 cup shredded coconut

  • 1/3 cup dried fruit of choice (I used raisins and cranberries)

  • 45g + 45g Dark Chocolate (I used Well Naturally Almond Chip)

Method

  1. In a large mixing bowl, combine all the wet ingredients. And in a separate bowl, combine all the dry ingredients.

  2. Pour the wet mixture into the dry and mix until combine to form a thick dough.

  3. Chop 45g of the chocolate. Then add the chopped chocolate and dried fruit into the dough mixture and fold through.

  4. Line a rectangle tray with baking paper and pour in the mixture and press down evenly and firmly.

  5. Place in the freezer for minimum 4 hours to set.

  6. Once set, cut into bars. Melt the remaining 45g of chocolate and drizzle over the bars. Place back in the fridge until chocolate is set or eat straight away!
