Flourless Sweet Potato Fudge Brownies

Decadent, fudgy and contain a sneaky serve of veg! This is the one brownie recipe you need in your life!

These brownies are:

  • Gluten free

  • Dairy free

  • Vegan

I can’t wait to hear what you think of them when you make them. I promise, they will not disappoint!

Ingredients (serves 9)

  • 1 cup sweet potato, mashed

  • 2 serves Happy Way chocolate pea protein powder (discount code: HAPPYELISE)

  • 1/2 cup cacao powder

  • 1/3 cup maple or rice malt syrup

  • 1/4 cup almond butter

  • 2 tsp vanilla extract

  • 1 tsp baking powder

  • Pinch of salt

  • 1/4 cup chocolate chips or chopped chocolate

  • 1/4 walnuts, chopped

Method

  1. Preheat the oven to 180 degrees celsius, fan-forced..

  2. Ad all ingredients, except for chocolate chips and walnuts, to a food processor and process until smooth and combined.

  3. Add in chocolate chips and walnuts and pulse a few times to mix through.

  4. Transfer mixture into a lined baking pan and bake for 30 minutes. You want them to till be a little undercooked when coming out of the oven as they will continue to cook in the pan (this is what helps to keep them fudgy!)

  5. Allow to cool in the pan for 30 minutes before transferring onto a wire rack to completely cool.

  6. Once cooled, cut and enjoy!
