Decadent Chocolate Raspberry Muffins
Get ready for your mind (and tastebuds) to be blown by these delicious, decadent Chocolate Raspberry Muffins. You won't believe they are gluten free, vegan AND refined sugar free!
Decadent Chocolate Raspberry Muffins
Serves 10
Ingredients
2 cups almond meal
2 tbsp coconut flour
1.5 tsp baking powder
1/3 cup cacao powder
Pinch of salt
2 vegan flax eggs - 2 tbsp flaxmeal + 6 tbsp water (or normal eggs)
1/2 cup coconut yoghurt
1/3 cup rice malt (or pure maple syrup)
2/3 cup almond milk
2 heaped tbsp almond butter (or any nut butter)
1 tsp vanilla extract
1 punnet fresh raspberries
1 block dark chocolate, chopped (I used Well Naturally Sugar Free Raspberry Crush Dark Chocolate)
Method
Preheat your oven to 180 degrees, fan-forced/bake.
Combine all the dry ingredients. In a separate bowl combine all the wet ingredients. Then pour the wet mixture into the dry and mix well.
Fold through the fresh rapsberries and chocolate.
Spoon into 10 muffin pans.
Place in the oven to bake for 25-28 minutes.
Allow to cool slightly before transferring onto a wire cooling rack.
Enjoy fresh out of the oven or store in an airtight container in the fridge for up to a week (but they won't last that long)
