Crunchy Peanut Pretzel Bars

Salty and sweet, and loaded with all the delicious goodness of peanut butter, pretzels and chocolate.. honestly, I think these could be one of my BEST snack creations to date!

Ingredients

  • 1 serve Happy Way peanut butter protein

  • 1/4 cup honey

  • 2 heaped tbsp natural peanut butter

  • 1 tsp vanilla extract

  • Pinch of salt

  • 1 cup rice puffs

  • 1/3 gluten free pretzels, crushed (I get mine from my local health food store)

  • Handful of dark choc chips or cacao nibs

  • Melted dark chocolate, peanuts and gluten free pretzels, to top (optional but recommended!)

Method

Preheat your oven to 180 degrees celsius, fan-forced. Combine the @happywayau protein powder, honey, peanut butter, vanilla and salt in a large mixing bowl.

Then fold in the rice puffs, pretzels and chocolate chips. Use slightly damp hands to press mixture firmly into a lined baking tin. Bake for 12-15 minutes, or until golden.

Remove from the oven and leave in the tin to cool. Place in the fridge for one hour prior to cutting.

Slice into 6 bars and top with melted chocolate and a sprinkle of crushed peanuts and pretzels OR just eat as is!
