Cookie Dough Weetbix Protein Bars

If you follow me over on instagram you would know I have a major obsession with Weetbix. There is just nothing they cannot do! Creamy Porridge, mug cakes, Cookies, slice, protein bars - seriously, they can do anything!

I absolutely adore the Weetbix in this recipe! Packed with protein and bursting with all the cookie dough vibes, what are you waiting for! Get on it!

Ingredients

  • 4 gluten free Weetbix

  • 2 scoops Happy Way vegan vanilla protein (my discount code is 'HAPPYELISE')

  • 2 tbsp honey (or pure maple syrup for vegan option)

  • 1 tsp vanilla extract

  • 2 tbsp almond milk

  • 2 heaped tbsp cashew butter (or sub peanut or almond)

  • 1 tbsp coconut oil, melted

  • 1/4 cup dark chocolate chips

  • Extra dark chocolate for topping, optional

Method

  1. Process all ingredients, except for the choc chips.

  2. The stir in the choc chips and press mixture into a lined baking tin.

  3. Pour over extra melted dark chocolate (if using) and set in freezer for minimum 3 hours before cutting into 6 bars.
