Chunky Tahini Cookies

Ingredients

  • 1.5 cups rolled oats

  • 1/2 cup almond meal

  • 1 tsp baking powder

  • Pinch of salt

  • 1/2 cup tahini (I used @mayversfood)

  • 1/4 cup pure maple syrup

  • 1 tbsp rice malt syrup

  • 1 tsp vanilla extract

  • Mix ins of choice: choc chips, walnuts, raisins etc.

Method

  1. Preheat your oven to 180 degrees celsius, fan-forced and line a baking tray with baking paper.

  2. Add all the dry ingredients to a bowl and combine. Separately combine all the wet ingredients and pour into the dry mixture and mix together.

  3. Fold in your mix ins of choice (I used raisins). Then roll heaped tablespoons of the cookie dough into balls, flatten into the shape and thickness you like.

  4. Bake for 10-12 minutes or until just golden. They will continue to cook after they come out of the oven, so if you want a real soft cookie, bake for less time.

  5. Enjoy ✨ I like to heat them up for a few seconds in the microwave before eating to make them warm just like they have come fresh out the oven
