Chocolate Peanut Butter Popcorn Bars

Say hello to your new favourite snack! But be warned, these are SUPER addictive!!

And that’s okay because they are made of totally wholesome ingredients and low in sugar so they won’t spike your blood sugar - thanks to the use of rice malt syrup and Well Naturally Sugar Free Rich Dark Chocolate! This is the only sugar free chocolate I’ve found that doesn’t upset my gut and actually tastes like real chocolate - an absolute dream.

Ingredients

  • 4 cups cooked popcorn (approx 2 tablespoons kernels)

  • 1 cup natural runny peanut butter

  • 1/3 cup rice malt syrup (or honey)

  • 2 tbsp coconut oil, melted

  • 2 tbsp peanuts

  • 1 block Well Naturally Sugar Free Rich Dark Chocolate (or chocolate of choice)

Method

  1. In a large bowl, stir together the rice malt syrup, peanut butter and coconut oil.

  2. Then add in the popcorn and peanuts. Stir through to coat all popcorn and peanuts in the peanut butter mixture.

  3. Line a medium sized rectangle pan with baking paper and pour in the popcorn mixture. Press down firmly with damp fingers. Then use the back of a glass cup to push down as firmly as possible (this is important so the bars will stay together and not crumble when cut!).

  4. Melt the chocolate in the microwave and pour over the popcorn slice. Smooth over and place in the fridge to set for at least 4 hours.

  5. Once set, cut into 12 bars. TIP: I found it beat to place the slice in the freezer for 20 minutes before cutting and wet the knife with hot water between each slice.

  6. ENJOY!!
