Choc Chip Protein Cookies
I made these cookies on Sunday and half the batch was already gone by Monday. Trust me when I say you NEED these cookies in your life!

Ingredients (makes 14 cookies)
1 cup gluten free flour
1.25 cup oat flour
2 serves VEGAN vanilla protein powder
2 tbsp coconut flour
3 tbsp granulated sugar of choice (I suggest coconut sugar or granulated stevia)
1 tsp baking powder
Pinch of salt
2 eggs
1/3 cup coconut oil, melted
1/4 cup almond milk
25g dark chocolate, chopped
Method
Preheat the oven to 180C fan-forced.
Place all the dry ingredients into a bowl and combine. The mix in the wet ingredients. If mixture is too dry and crumbly, add extra almond milk to reach cookie dough consistency.
Fold in the chocolate.
Shape 1 heaped tbsp of mixture into a ball, place on a lined baking tray and flatten. Repeat for remaining dough.
Place in the oven to bake for 10 minutes.
