4-ingredient Protein Fudge
This has been my GO TO dessert lately. I always have a batch of this in the freezer now. I am such a sweet tooth so I have something for dessert every single night. And because it is high in protein and healthy fats, a piece or 2 is plenty enough to satisfy my sweet tooth after dinner.
I have honestly been making this on repeat, I just cannot get enough of it! It only takes minutes to make and keep it stored in the freezer so you always have a little sweet treat ready to go when you need it.
Ingredients (makes 9 pieces)
1/2 cup cashew butter
2 tbsp rice malt or pure maple syrup
2 tbsp coconut oil
1 serve Happy Way vegan vanilla protein (discount code: HAPPYELISE)
Toppings of choice: banana slices, berries, coconut, hemp seeds, nuts, seeds etc.
Method
In a small saucepan, add the cashew butter, syrup and coconut oil. Place over low-medium heat and heat until the coconut oil melts and everything is smooth and combined.
Take off the heat and stir in the protein powder.
Transfer mixture onto a lined tray and spread out to desired thickness.
Top with choice of toppings and place in the freezer to set for minimum 3 hours (overnight is best) before cutting.
