3-ingredient Banana Oat Cookies

Delicious GLUTEN FREE and VEGAN cookies made from 3 ingredients you will almost certainly have in your pantry.

Ingredients (makes 10-12 cookies)

  • 2 ripe banana's, mashed

  • 1/2 cup peanut butter

  • 2 cups rolled oats (gluten free if needed)

  • 1 tbsp honey (optional)

  • 1 tsp vanilla extract (optional)

  • Pinch of salt (optional)

Method

  1. Preheat oven to 180 degrees celsius.

  2. Add all ingredients into a bowl and combine well (you don’t have to use the optional ingredients but they do enhance the flavour 😋).

  3. Spoon about 1 tbsp at a time onto a lined baking tray and shape into cookies. Mixture should make a about 10-12 cookies.

  4. Bake for 12-15 minutes, until golden brown.
