It doesn’t get much easier than these fluffy, 4-ingredient Mocha Protein Pancakes!
They are the perfect way to start your day; providing you a little energy kick from the coffee, a serving of fruit and chocolate (because everyday should start with chocolate).
Mocha Protein Pancakes
- 1 banana
- 2 eggs
- 30g chocolate protein powder (I used macr0mike Choc Peanut Butter Protein)
- 1 sachet Be Goat adaptagen Coffee (use code ELISE10 at checkout for $10 off) OR 1 tsp instant coffee
- Optional: 1/2 tbsp cacao powder (to make them extra chocolately)
Blend all the ingredients until smooth. Heat a non-stick fry pan over low-medium heat and spoon two tablespoons of batter per pancake. Cook until starting to bubble, then flip and cook for another 1-2 minutes. Add your toppings and enjoy!
