What better way to get into the Christmas spirit than with a festive Gingerbread Oatmeal for breakfast!
This tastes just like a traditional Gingerbread Cookie, thanks to the addition of the Molasses which is what gives Gingerbread it’s delicious, distinctive taste!
This recipe is super simple and quick to whip up of a morning, it will take you less than 10 minutes. So put some Christmas carols on, get in the kitchen and whip up this delicious, nourishing Gingerbread Oatmeal for your next breakfast to get into the festive spirit!
- ⅓ cup rolled oats
- ⅓ medium zucchini, grated (optional, but adds heaps of volume)
- ⅔ cup water or almond milk
- 1 tsp maple syrup
- 1 tsp molasses
- Spices: ginger, cinnamon and nutmeg (as much or as little as your heart desires!)
- Optional: 1 serving vanilla protein
Add the oats, grated zucchini and water/milk to a saucepan and heat over medium heat. Stirring occasionally until it comes to a boil. Turn the heat down to low and add in all the extras – maple syrup, molasses, spices and protein powder. Allow to simmer, stirring occasionally until the liquid is absorbed and the oatmeal has thickened. Then, it is ready to serve! Add whatever toppings you desire and dig in!
