On the weekend, I finally found a bottle of Coconut Kefir at a local grocery store! Coconut kefir is coconut water that has been fermented with kefir grains and is rich in good-for-the-gut PROBIOTICS. It provides fuel for the good bacteria in your gut and can help improve immunity and digestive health.
Today I added the coconut kefir into my chia pudding and WOW – the taste, the texture; SO GOOD! Plus, the Coconut Kefir paired with the high fibre and omega-3 content of chia seeds, makes this Coconut chia pudding perfect for promoting a healthy gut!

Choc Coconut Chia Pudding with Coconut Kefir
- 3 tbsp chia seeds
- 50ml Coconut Kefir
- ½-2/3 cup coconut milk (or almond milk)
- ½ mashed banana
- ½ tsp Vanilla extract
- 1 tsp maple syrup
- 1 tsp cacao powder
- 1 serving Chocolate Protein powder
Add chia seeds, coconut kefir, milk, banana, vanilla, maple syrup, cacao and protein powder to a bowl or jar and combine. Set in the fridge overnight. In the morning, give the pudding a little stir – add a little more milk or water to loosen if too thick. Top with banana, berries, coconut flakes and and your favourite nut butter!
