Carob Coconut Rough

Coconut Rough, since I was a little kid, has always been one of my favourite treats. But its pretty hard to find a dairy and gluten free coconut rough these days! So naturally, I’ve gone and made my own.

I’ve made a few batches of this already and they do not last long at all… the 12 bars are gone within a couple of days! So beware: they are addictive!!

I love receiving hand made gifts, and I think this would be the perfect DIY Easter Gift with Easter being just around the corner! A few pieces of this wrapped in some cellophane – seriously, who wouldn’t want that!

This recipe is:

  • Dairy Free
  • Soy Free

Carob Coconut Rough

  • Servings: 12
  • Difficulty: easy
  • Print


  • 1/3 cup carob
  • 1 cup desiccated coconut
  • 2 tsp Tahini
  • 1/3 cup maple syrup
  • 2 tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • 1 tbsp almond butter


  1. Add all ingredients to a bowl and mix until combined.
  2. Transfer into a pan and press down with the back of a spoon, ensuring it is spread out evenly and roughly 2cm thick.
  3. Sprinkle with a little extra desiccated coconut and place in the freezer to set for 3 hours before cutting into bars.
