Fluffiest Banana Protein Pancakes

The fluffiest protein pancakes you’ll ever make! So dense, moist and delicious! Its like eating little pillows of happiness.
This is such an easy recipe to whip up for breakfast. Perfect for the weekend or if your just feeling like something a little more decadent during the week.
These pancakes are packed with protein from the protein powder, contain 1 of your 2 servings of fruit per day and are loaded with healthy fats to keep you feeling full and satisfied and keep your skin glowing!

Fluffiest Banana Protein Pancakes

  • Servings: 1
  • Difficulty: easy
  • Print
  • 1 banana, mashed
  • 1 serve of vanilla protein powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1.5 tbsp coconut flour
  • Pinch of salt
  1. Combine all the dry ingredients in a bowl and add in the wet ingredients and mix well.
  2. Spray a non-stick pan with olive oil and heat over medium heat.
  3. Spoon in 2 tbsp of batter per pancake and cook until bubbles start to appear and then flip to cook for 1 minute on the other side. Repeat until all batter is used.
  4. Serve with coconut yoghurt, a drizzle of maple syrup and berries.
Lemon and Blueberry – remove the cinnamon and nutmeg, and instead mix in juice of half a lemon and a handful of frozen blueberries.
Chocolate Chip – add in a handful of chocolate chips to the batter.
Double Chocolate – leave out the nutmeg and add in 1 tbsp cacao powder or carob powder as well as a handful of chocolate chips.
