Snickers Protein Balls

  • Servings: 16 Balls
  • Difficulty: easy
  • Print
    • 1 cup almond meal
    • 1 serve chocolate protein powder
    • 2/3 cup dates, soaked in boiling water for 15 minutes
    • 1 tbsp cacao powder
    • 4 tbsp natural peanut butter (smooth or crunchy works)
    • 2 tbsp melted coconut oil
    • 1 tsp vanilla extract
    • Pinch of salt
  • Optional: handful of peanuts (if not using crunchy peanut butter)
  1. Discard the date soaking water and add dates to a food processor. Blend until a paste forms.
  2. Add remaining ingredients (excluding peanuts if using) and blend until a crumbly dough mixture forms.
  3. Add in the peanuts and pulse to combine.
  4. Roll into 16 balls. You will have to press the mixture together so they don’t crumble before rolling into a circular ball.
  5. Place in the freezer for 30 minutes to set, then enjoy 1-2 as a snack or after dinner treat!
